Cheese Tea Sandwiches With Sharp Cheddar And Crisp Apples



These cheese tea sandwiches are rich enough for an autumn tea party, but are also delicious all year long.




Makes 8 sandwiches

Choose one crisp apple like Fuji, core and peel it, then slice very thin. Dip in the juice of one lemon, and refrigerate.

Choose your favorite very sharp cheddar, refrigerate, and slice very thin.

Ingredients:

2 ounces cream cheese

2 tablespoons spiced apple jam or jelly

Pinch of powdered cloves

4 slices thin white bread

Mix together the cream cheese, cloves, and spiced apple jam.

Spread on one side of all 4 slices of bread.

Arrange the sliced cheddar on 2 slices of bread. Note: Some cheddars may crumble. If so, you may want to process the cheddar with some extra cream cheese until it can hold its shape.

Add the drained apple slices.

Top with the remaining 2 slices of bread. Remove the crusts using a long thin sharp knife.

Cut them into quarters diagonally.

Makes 8 servings.

Serve with almost any daily green tea, including Gunpowder and any of the Senchas.
